- 1 Tbs. whole grain mustard
- ¼ tsp. honey
- 1 Tbs. minced shallot or red onion
- 1 Tbs. red wine vinegar
- ¼ tsp. kosher salt
- 3 Tbs. extra-virgin olive oil
- 8 cups salad greens
- ½ cup shredded carrot
- ½ cup cherry or grape tomatoes
- ½ cup sliced cucumber
Step 1: In a large bowl, whisk together mustard, honey, shallot, vinegar, salt and oil.
Step 2: Toss salad greens with dressing. Top salad with carrot, tomatoes and cucumber.
