Celiac disease is an autoimmune disorder affecting at least three million Americans. But the vast majority of people who have Celiac disease are undiagnosed. That’s why May was designated Celiac Awareness Month to raise awareness and generate support for more research.
Celiac disease is characterized by an intolerance of gluten – a protein found in grains such as wheat, barley, and rye. When someone with celiac disease eats foods containing gluten, their immune system responds by damaging the small intestine lining. There can be symptoms such as diarrhea or abdominal pain during even short-term exposure to gluten for someone with celiac disease.
